Served warm and bubbly inside a hot vessel? Sure. But also spicy, cheesy, meaty, sticky, nourishing, and filling. Stubborn, and therefore humble ingredients such as oxtail and dry beans are brought down to a surrendered state of gooeyness simply by the magic of time passing, becoming one with the spicy sweetness of Korean chili paste and garlic, lots of garlic. Just when you think it's approaching heaviness, the strategically late addition of kimchi brings acidity and crunch. Then the final onion soup-treatment, an almost cheap trick of finishing it with a crusty slice of bread with tons of melty bubbly cheese on top, will secure its place, I promise you, as your ultimate winter antidote for seasons to come. Another new recipe on @food52! This time, I’m s Another new recipe on @food52!  This time, I’m sharing my modernized way of making one of the most traditional Cantonese dishes, radish cake.  There’s no long steaming step in this recipe.  We are just going to create a simple batter, a batter that purely celebrates the sweetness of Chinese radish without trying to make it taste like anything else. Then we pan-fry it like a patty which will give us crispy edges and gooey juicy center.  It’s a elegant canvas for all the bold colors to come.  Caramelized cantonese sausages and mushrooms and dried shrimps with all their bites and kicks, create a contrast against the sweet tender radish cake, giving this traditional dish a new perspective and sharpens its message. It’s finally here! My copycat version of @meetf It’s finally here!  My copycat version of @meetfreshusa’s flagship item: grass jelly ice dessert, is now on @food52.  This thing is so huge in Taiwan that it’s practically it’s own food group, and it’s spreading it’s gospel fast around the world.  The ice, which in this case is made of grass jelly, a tea-like jello, paints a broad brush of refreshing background flavor that contrasts generously with the starchy-sweet taste of mashed taro. The toppings, which oftentimes make or break the dessert because it provides the quintesential “QQ” (something chewy) to the party, are made from kneading cooked taro and yam together with various starches, to create “balls” that bounce to the bites. Then last but not least, invented by Meet Fresh I believe, is a last dash of coffee creamer that miraculously brings all parties together into a merry-making circle of culinary kumbaya.
