What’s a perfect flour tortilla?  After all, I’ve never been to Mexico.  Is it soft?  Or is it chewy?  Is it thick?  Or it is thin?  Is it charred?  Or is it lightly blistered?  Over the years I’ve tried them all and had no clue close I was. I guess here I turn to you. Help me out will ya?

This is my twist on snow crisp, or sometimes calle This is my twist on snow crisp, or sometimes called a marshmallow crisp or marshmallow nougat.  My version has just the right resistance, just the right gives, dense and chewy yet airy and textural.  Instead of the typical plain crackers, a full deployment of salty cheese crackers, in both ground up form as well as whole, has rendered this typically white candy bar practically orange.  The cheesiness recedes into the background, leaving an overall complex but well-balanced, savory-sweet profile that tingles with some mild tartness from dried prunes and the occasional nutty bonuses of roasted pistachio.
Sure there is definitively nothing “snow” about this.  But consider it a Jon Snow.  A bastard with true substance that you can't get enough of.  The recipe for chewy marshmallow nougat with cheese cracker and pistachio, is now on the blog. •
