  1. You are so funny! No need to ask twice to make these. Hawaii has moffles (Mochi + Waffles), but these are even better. Truffles! Can’t wait to make these!

  2. On the contrary…I’m thinking these are some of the most beautiful things I’ve ever seen. Chocolate truffles, mochi, waffles?! Those crisped up chocolate bits on the edges? This is pure genius. As always!

  3. Hi Mandy,
I don’t own a waffle maker, can I use a cast iron pan instead to make this, like making pancakes?

    • Anna, I’m not sure it will be easy. The batter is very sticky and thick, and it might take even longer to cook both sides, and then you won’t have the crispy thin parts of a waffle :(

      • Oh noooo :(
Maybe it’s time that I get a waffle maker machine… Anything in particular you recommend?

        • Anna, my is a not so expensive one called “Roche’s Choice”? Not even sure if it is a thing outside of China but it works fine… But if you want to invest in one with removable griddle (for easy cleaning), good things are being said about Hamilton Beach’s waffle griddle.

  4. Well, I think I know what I’m going to be doing at 11AM on Memorial Day now (post sleeping in).
Mandy, you wow me with every single post. I have this box of premade mochi waffle mix sitting on my counter but this sounds a billion times better because a) chocolate, 2) TRUFFLEZ, and xyz) the uglier the better! I can get down with all those things.

  5. Not a fan of mochi it’s a chewy texture thing. However looking at this recipe reminds me of this filipino dessert made with mochi sweet rice (not the flour), coconut milk, brown sugar and in our family fennel seeds. Maybe it’s called bibinka I not sure but anyways this dish my mom made might be great item to wafflize.

  6. Hi Mandy,

I’m making these, as we speak. I have a question regarding measurements. When you make these, do use use cup or with measurements? I love absolutely EVERY recipe you post and have made so many delicious recipes from your blog. And congrats on your Saver award! Well deserved!!

    Thanks,
    Maureen

  7. Thank you! I discovered your blog recently and already love your recipes. We tried your mochi waffles and it’s a big hit with the family :)

  8. I have arrived from 10 yrs into the future to answer your question. Sorry it took me so long. I was wondering the SAME thing last night as I was searching for chocolate mochi waffle recipes to make for my daughter’s birthday today. I tried really hard to skip this one because of that microwave step… and also the idea of pulling out my stand mixer just for waffles just seemed like too much work. But in the end, the crispy edges got me and I had to take the extra 2 minutes of effort to try it. So from someone who is currently munching on a perfect chocolate mochi waffle: IT WAS SO WORTH IT. THESE ARE SO GOOD. I had a favorite chocolate belgian waffle recipe before… but make it chewy with rice flour and extra crispy and add bits of melty chocolate? It’s going to be my new monthly go-to when that dark chocolate craving hits extra hard hahaha.

Deeply chocolatey, crispy on the inside, perfectly chewy on the inside, and that extra crispy from the melted chocolate. She didn’t lie. These are it.
