  1. This is genius (and dangerous) to make your own real-fake cheese powder. I’d definitely already planned to try your popcorn recipe and now this?! So many possible things to put it on! I like that you went with potatoes (I’m thinking even easier oven-baked french fries would also be pretty awesome with cheese powder; like you said, it’d even make cardboard taste good…)

    Oh and can I just say how much I love your writing! It is vying with your photos and your recipes for my affection…

  2. Cabot makes a product called Cheddar Shake that would eliminate a lot of effort here. It’s delicious on EVERYTHING, and the ingredients are cheddar cheese, whey, buttermilk, salt, and disodium phosphate. About as natural as you’re going to get.

  3. Well, I know what I’ll be making on Saturday night! I’m going to use Red Leicester cheese for the powder, and substitute the sour cream for full fat cream cheese. It should mash through the potatoes well enough, and full fat cream cheese holds its shape when baked. I’m thinking it may help prevent the balls from collapsing, whilst still retaining that element of creaminess. I made the Kona coffee almonds last weekend too, and they were addictive.
