  1. you’re right, i do need these. not like i needed much convincing once i saw the cracklings though… i saw all the soup dripping out of the dumpling and was a little bit sad at the loss given all that work, but seeing it trapped in a soup spoon later was relieving (did you see that viral video where one of the food media company was letting all the soup drip out of xiao long baos?).

I have lately become obsessed with dumpling making since my shanghainese friend kindly came and gave me a master class in bao zi and flower buns ( I have been dreaming of these since I ate them 20 yrs ago!) We moved onto Shao long bao last night and my fussy daughter couldn’t be happier eating them for dinner and breakfast this morning! This recipe looks completely deliciously bonkers and I can’t wait to make them. Now I just need to see it I can justify dropping the packing to make these. You have got some serious flavour talent going on. I love your mix of traditional and crazy. Amazing stuff.
